
Carrot Cookies
These are delicious and can be eaten for breakfast or as a snack/dessert. They can be made gluten-free and/or dairy-free as well!

Ingredients
- 2 cups flour whole wheat/spelt
- 2 cups rolled oats
- 1 cup carrot grated
- 1/4 tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
- 1/4 tsp ground ginger
- 1/4 tsp nutmeg
- 1 tsp cinnamon
- 3/4 cup honey
- 1/2 cup softened butter or coconut oil
- 2 eggs
- 1 cup chopped walnuts optional
Instructions
- Mix together flour, baking powder and all spices
- Cream together butter or oil and carrot
- Add baking soda, honey and eggs
- Stir in oats and nuts, if desired
- Add dry ingredients into the carrot mixture and mix until combined
- Grease/line a pan with parchment paper
- Drop spoonfuls of the mixture onto pan
- Bake at 350° for 13 min
