
Gingerbread Protein Squares

Ingredients
- 3/4 cup quick oats
- 1/2 cup vanilla protein powder of your choice
- 1/2 tsp ground ginger
- 1/8 tsp ground cloves
- 1/4 tsp ground cinnamon
- 1/4 cup melted coconut oil
- 1/4 cup almond butter
- 2 tbsp blackstrap molasses
- 2 tbsp maple syrup
- 1/4 tsp vanilla extract
Optional Icing (Not dairy-free)
- 8 oz block cream cheese softened to room temperature
- 1/4 cup plain greek yogurt
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Instructions
- In a food processor, combine, oats, protein powder, ginger, clove and cinnamon
- In a separate bowl, whisk together the melted coconut oil, almond butter, molasses, maple syrup and vanilla
- Combine the wet and dry ingredients in the food processor and blend well
- Spread the batter into a loaf pan lined with parchment paper. Refrigerate for 1 hour
- Remove the squares from the pan and cut into 8 pieces
For Optional Icing
- Place all ingredients in a large mixing bowl
- Use a hand mixer or stand mixer and beat on medium speed for a few minutes, or until it’s smooth and fluffy, scraping down the edges as needed
- Spread evenly onto your gingerbread squares and refrigerate before cutting into pieces
