
Lentil Brown Rice Soup

Course Soup
Ingredients
- 1 cup mixed dried lentils and beans I use Tru Roots Sprouted lentils and mung beans
- 1/2 cup brown rice
- 7 cups water
- 3 carrots
- 2 stalks celery
- 1 cup chopped broccoli (including leaves and stems)
- 1 onion
- 1 clove garlic
- 1 bay leaf
- 1/2 tsp sea salt or to taste
- 1/2 tsp black pepper
- 1 tbsp turmeric
- 1/2 tsp chili powder or to taste
- 1 vegetable bouillon cube I use Organic Bouillon, low sodium Vegetable
Instructions
- Chop vegetables and combine all ingredients including spices in a large stock pot
- Bring to a boil and simmer for 1.5 – 2 hours
