
Protein Energy Balls

Ingredients
- 1/2 cup medjool dates
- 1 cup rolled oats
- 1/2 cup almond butter (can use any nut or seed butter)
- drizzle honey (optional)
- 2 tbsp hemp seeds
- unsweetened shredded coconut (for topping)
Instructions
- Soak the medjool dates in boiling hot water for 5 minutes. Drain and set aside
- Combine the softened and drained dates, oats, almond butter, and honey; if using, in a food processor. Process until the mixture binds, around 3-5 minutes
- Roll into 16 balls with your hands (use one heaping tablespoon per ball) until smooth
- Roll the balls into shredded coconut or other optional toppings
- Keep refrigerated in an airtight container for up to 5 days
