
Socca Pizzas

Ingredients
- 2.5 cups chickpea flour
- 2 tbsp olive oil for frying and more as needed
- salt to taste
- toppings of your choice
Instructions
- To make the batter, whisk together the chickpea flour, olive oil and 2 cups water and season with a pinch of salt
- Add two tbsp olive oil into an 8-inch nonstick pan over medium-high heat
- Pour ¼ cup of the batter and cook for 3-5 minutes, until the bottom is crispy, and the top is almost set
- Carefully flip the socca and cook for 1 minute more
- Transfer to a plate and top with your favorite toppings
- Repeat with the remaining batter
- Enjoy!
