Almond Butter & Banana Pancakes

These flourless and high-protein pancakes are made with only 5 ingredients. They are sweet and nutty and can be prepared in minutes.
Course Breakfast

Ingredients
  

  • 2 ripe bananas
  • 1/2 cup almond butter or nut butter of your choice
  • 4 eggs
  • 1 tsp ground cinammon
  • 1 tbsp coconut oil

Optional:

  • fresh fruit for topping
  • cocoa nibs

Instructions
 

  • In a large bowl, mash the bananas until smooth
  • Whisk in the almond butter, then add eggs one at a time, whisk well, until everything is mixed thoroughly
  • Stir in the cinnamon
  • Heat a large skillet over medium-high heat with coconut oil
  • Scoop 2 tablespoons of the batter per pancake onto the skillet, leaving room for them to spread
  • Cook 2-3 minutes, or until the bottom is set, before flipping
  • Cook on the opposite side for an additional 2-3 minutes
  • Top with fresh fruit and/or cocoa nibs, if desired
  • Enjoy!
